The fact that I still use my grandmother’s cast iron pans every couple of days says a lot. But it’s not just about their longevity; it’s really about their utility. Because as far as I can tell, there’s nothing they can’t do. Sear, bake, roast, sauté…the list goes on. And if you don’t have (or know) a grandmother willing to part with her pans, I say you go get some of your own.
