Time Saver: Cook Once – Have Meals for a Week

Cook once and eat a bunch of times is not a pipe dream…it’s completely do-able. And whether you start with a roasted chicken, a pot roast or (in this case) a meatloaf – it’s all good, different and way delicious, and a great time saver.

Time Saver: Cook Once – Have Meals for a Week

Prep Time: 10 minutes

Cook Time: 60 minutes

Yield: 6 - 8 servings

Time Saver: Cook Once – Have Meals for a Week

Ingredients

Meatloaf:

1 pound ground beef

1 pound ground pork

3/4 cup bread crumbs (Japanese Panko crumbs work really well)

1 package fajita seasoning

4 ounces diced green chilies

2 eggs, beaten

Glaze:

1 1/2 cup ketchup

1/3 cup apricot jam

2 tablespoons chopped chipotle peppers

Instructions

  1. Preheat oven to 350.
  2. Mix all meatloaf ingredients together and put into a greased loaf pan, or shape into a loaf.
  3. Place on a greased baking sheet.
  4. Mix the glaze ingredients together in a bowl and spread about 3/4 of it over the meatloaf.
  5. Bake 45 minutes to an hour, or until 155-160 degrees inside.
  6. Allow to cool slightly, slice into 1 inch thick pieces and serve with extra sauce.

Awesome.. Thank you for the printed recipe and the very short video! I like you Sam, and I like your webcast. But sometimes when I want to see a recipe on your show..it’s a pain to fast forward to see the actual cooking!:)

Love your e-mails and show when I catch it. You are delightful and refreshing. Only thing is I am an 80 year old grandmother and often wish I were not, or that we had this kind of technology when I was young.
I do think about my grandchildren and how useful you are for them. Hopefully they follow you. GREAT SHOW AND RECIPES
