I love a tradition, and this White Bean Chicken Chili recipe has been our Halloween Eve taste treat for a very long time. The key is to make a bunch of it. Then let it be the casual, comfort-food center of a trick or treat ‘door answering’ party. Oh, make a double batch because it freezes well too.
1 Tablespoon olive oil
1 small yellow onion, chopped
4 cloves garlic, minced
4 – 15 ounce cans white kidney beans (cannellini), drained
1 - 4 ounce can diced green chilies
2 cups cooked chicken, shredded
2 cups chicken broth
2 teaspoons cumin
1 teaspoon cayenne
1 teaspoon oregano
Parsley, chopped for garnish
- Heat olive oil and sauté onion and garlic until soft.
- Add everything else and you're done.
- OK, technically you need to simmer everything to let it all warm up.
- Then just serve with a little parsley on top in a mug to enjoy as you trick or treat - or answer the door.
