Raise your hand if you like spending a lot on dinner…I thought not. With that thinking in mind, here is a tasty, hearty and inexpensive dinner everyone in your family will love.

Chili Pork Pot Pie

Prep Time: 15 minutes

Cook Time: 30 minutes

Yield: 6 servings

Chili Pork Pot Pie


1 Tablespoon olive oil

1 pound ground pork

1 green pepper, diced

1 Tablespoon chili powder

2 teaspoons Kosher salt

2 cloves garlic, minced

1 – 16 ounce jar black bean salsa

1/2 cup cheddar cheese, shredded

1 egg, beaten

1/2 cup Bisquick

1/3 cup milk

1/2 Tablespoon chili powder


  1. Preheat oven to 400.
  2. In a pot over medium heat, put in oil and pork - cook until no longer pink. Add green pepper, chili powder, salt and garlic. Stir well and cook a couple minutes more. Mix in salsa well and pour into an ovenproof dish and top with cheese.
  3. Beat egg and mix with Bisquick, milk and chili powder. Pour over chili and bake about 30 minutes or until golden brown.

Looks really yummy. Might experiment with using a cornbread mix instead of bisquick.
