Pesto is one of those things that once you have it, you can use it as an accompaniment with lots of other foods, and you should! But the best part may be that it is super easy to make.
2 cups fresh basil leaves, packed
1/4 cup pine nuts
2 cloves garlic, peeled
1/2 teaspoon red pepper flakes
1/2 cup grated Parmesan cheese
1/2 cup extra virgin olive oil
Kosher salt and freshly ground black pepper
- Combine basil, pine nuts, garlic, red pepper flakes & Parmesan in a blender or food processor. Blend continuously until finely chopped.
- With the blender running, slowly drizzle in olive oil until well combined.
- Add salt & pepper to taste, mix well and use.
