Easy Jambalaya Recipe


I’d be miserable without my rice cooker. Of course I could make rice without it, but I wouldn’t want to. There’s no worrying about burning, drying out or ruining the rice when you use a rice cooker. And then, when you realize you can make something as awesome as this easy Jambalaya recipe with virtually no cooking skills – you’d be crazy not to own one.

Overview

  • Prep Time: 10 minutes
  • Cook Time: 45 minutes
  • Yield: 8 - 10 servings

Ingredients

  • 1 1/2 cups uncooked rice (not instant rice)
  • 1 pound spicy smoked sausage, the fully cooked kind - cut lengthwise and then into 1/4 inch half rounds
  • 1 pound raw peeled and de-veined shrimp
  • 2 cups cooked chicken, shredded into bite-sized pieces
  • 7 ounces diced green chilies
  • 2 tablespoons Creole seasoning
  • 4 cups chicken broth

Instructions

  1. Put everything into the rice cooker, stir well, close the lid and press start.
  2. When the rice cooker goes off - it's ready and delicious.

  1. I don’t have a Rice Cooker! How would I cook it?? Sounds delish & Easy!!

Hey Cindy – it is delish and easy. but with no rice cooker, just put the rice and broth in a pot, bring to a boil, turn down to a simmer, add everything else, stir well and cover. cook until all is done – maybe 20 minutes. the chick and sausage are already cooked, so you’re really just waiting for the shrimp. of course the beauty of the rice cooker is that it turns itself to warm when it’s done – so you’ll have to watch your version. but it should be great.
