Three Impressive (and Easy!) Takes on Marinated Olives [Recipe]
To turn the snack spread at your next get-together into a showstopper, whip up a batch of marinated olives. They can be customized to suit just about any menu, from tacos to shakshuka, and you can make them well in advance—because spending the whole day of a dinner party prepping is the pits. Below, a few starting points, but you’re very much encouraged to improvise.
Rinse 2 cups of olives, such as Kalamata, Picholine, or Niçoise
Add 1/2 cup olive oil to a small pot.
Choose a flavor profile, and add the seasonings to the pot:
Mojo – 4 cloves smashed garlic, ½ sliced orange, and ½ teaspoon cumin
Zesty Italian – Zest of 1 lemon, 1 sprig fresh rosemary, and 1 teaspoon red pepper flakes
Honey Za’atar – 1 tablespoon honey and 2 teaspoons za’atar spice blend
Slowly warm the pot over low heat for about 5 minutes to infuse the olive oil. Turn off the heat and add the olives.
Steep until cool, about two hours. Serve room temperature—ideally in one of these cute little bowls!—or refrigerate for up to two weeks. The flavor will get stronger the longer they marinate.
