Crispy Roasted Potatoes Recipe

Find me something that these perfect little gems don’t go with, and I’ll be very surprised.


  • Prep Time: 10 minutes
  • Cook Time: 45 minutes
  • Yield: Makes four - six servings.


  • 1 pound new potatoes
  • 1 Tablespoon Kosher salt
  • Fresh ground pepper
  • 1 Tablespoon olive oil


  1. Preheat oven to 425 degrees F.
  2. Cut potatoes into 1/4’s or bite size pieces. Put in a small pot, cover with about an inch of water, add 1/2 tablespoon salt and stir. Bring to a boil, turn down to a simmer and cook 7 minutes. Drain, put into a large bowl add remaining salt, pepper, olive oil and toss well.
  3. Spread out in a single layer on a baking sheet and put into oven.
  4. Bake 30-40 minutes or until crispy – stirring every 15 minutes. Serve.
