Easy Mother’s Day Brunch Recipe – Stuffed French Toast

You’re cooking for mom…right? Moms deserve special care, especially on Mother’s Day. So why not start her day with a super easy stuffed French toast? She cooked for you for many years, now it’s your turn.

  • Prep Time: 5 minutes
  • Cook Time: 5 minutes
  • Yield: Makes 4 slices


  • Four 1 1/2 inch thick slices of a good bread: sour dough, challah, French
  • 1/2 cup softened cream cheese
  • 4 big tablespoons of your favorite jam or jelly (I like raspberry)
  • 3 eggs, beaten
  • 2 Tablespoons milk
  • 1 Tablespoon butter
  • Powdered sugar


  1. Slice an opening in one side of the bread (not all the way through) to make a pocket. Spread cream cheese inside each piece of bread and then some of the jam or jelly.
  2. In a shallow medium sized bowl beat the eggs and stir in the milk.
  3. Preheat a nonstick skillet and add butter – let the butter melt.
  4. Dip each stuffed sandwich into the egg mixture (be sure cover both sides AND the ends) and place in the skillet. Cook until golden brown on each side and be sure to cook the ends too.
  5. Put on a plate and sprinkle with powdered sugar to serve.
