Grass-Fed Beef Meatloaf Recipe


Take this classic from heavy to healthy by swapping regular ground beef for grass-fed. It’s higher in brain boosting omega-3’s and the types of fat that promote heart health. Swapping mashed potatoes for cauliflower creates a lighter side, lower carb side dish option.

Ingredients

Meatloaf:

  • ● 2 lbs organic grass fed, grass fed ground beef
  • ● 1 organic green bell pepper, diced
  • ● 1 organic red bell pepper, diced
  • ● 1 small organic onion, diced
  • ● ¾ cup shredded zucchini
  • ● 1 8 oz. jar organic tomato paste
  • ● 2 carrots, shredded
  • ● ½ teaspoon organic worcestershire sauce
  • ● ½ teaspoon Himalayan or sea salt
  • ● ½ cup sprouted bread crumbs
  • ● 1 egg

Sauce:

  • ● 1 15 oz. can of organic, fire-roasted, no salt added diced tomatoes
  • ● 1 tsp. apple cider vinegar
  • ● 1/8 tsp. sea salt
  • ● 1/8 tsp. paprika
  • ● 1 tbsp organic mustard
  • ● 4 oz. organic tomato paste
  • ● Sweetening Option of Choice: 1 soaked dried date or dried fig OR 2-3 drops liquid plain stevia

Instructions

  1. In a mixing bowl, combine all ingredients, saving the egg for last. Stir until well combined.
  2. On a lined baking sheet, form into a loaf and cook at 400 for about 30-35 minutes.
  3. In a food processor, combine tomatoes, vinegar, salt, paprika, mustard, tomato paste, and optional sweetener. Process until smooth. Pour over the top of the meatloaf.
