Moroccan-Spiced Roasted Carrot Curls with Mint & Almond Recipe

Want to get them to eat more veggies?  Give this delicious dish a whirl!  Roasting vegetables brings out their natural sweetness while your spiralizer ups the cute factor with pretty carrot curls.  A mix of spices lends a delicious exotic finish to this anything-but-boring side!


  • Prep Time: 15 minutes
  • Cook Time: 20 minutes
  • Yield: Makes three cups carrots to serve four-six


  • 6 cups spiralized carrot (~4 extra large carrots)
  • 4 teaspoons olive oil, divided
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoon ground coriander
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon cayenne pepper
  • 1 Tablespoon lime juice
  • 3 Tablespoons chopped fresh mint
  • 2 Tablespoons toasted almonds


  1. Preheat oven to 400 degrees F and line two baking sheets with parchment paper. Toss carrots with 2 teaspoons olive oil, salt, and spices. Spread evenly across baking sheets and roast for 10 minutes. Stir carrots and switch pan positions in the oven. Continue to roast for another 5-10 minutes or until carrots begin to lightly brown. Toss with remaining 2 teaspoons olive oil, lime juice, and mint and serve garnished with toasted almonds.
