Pumpkin Pie Spiced Overnight Oats Recipe

Hosting overnight guests this holiday season? We have a delicious and easy breakfast-for-a-crowd solution!  Only a handful of ingredients in your slow cooker transform steel cut oats into decadent dessert-like breakfast oatmeal with everyone’s favorite “Pumpkin Spiced” flavor.  Also excellent served for a brunch open house.


  • Prep Time: 5 minutes
  • Cook Time: 6 hours
  • Yield: Makes eight cups


Slow Cooker


  • 2 cups steel cut oats
  • 1 15ounce can pumpkin puree
  • 7 1/2 cups milk
  • 1 Tablespoon pumpkin pie spice
  • 2 teaspoons cinnamon
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt
  • Optional garnishes: dried cranberries, toasted chopped pecans, brown sugar, cream


  1. Combine all ingredients in slow cooker. Cook for 5-6 hours on low. Serve with optional garnishes.
