Regional Foods: Hawaiian Huli Huli Chicken Recipe

As we continue our regional foods tour of the US, we happily find ourselves in the warm waters and tropical breezes of Hawaii for delicious Huli Huli Chicken.  And not only is it delicious, but you probably have all the ingredients in your house right now.


  • Prep Time: 2 hours
  • Cook Time: 20 minutes
  • Yield: Makes three pounds


  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 2 Tablespoons Worcestershire
  • 1 teaspoon sesame oil
  • 1 Tablespoon Sriracha
  • 3 pounds chicken wings & legs
  • Greens onions & sesame seeds to garnish


  1. Combine first 6 ingredients in a bowl and mix well. Add about 3/4 of the marinade to chicken in a large bowl - set the rest aside.
  2. Stir to make sure chicken is well covered and refrigerate up to a couple hours.
  3. Heat grill to medium, and cook chicken until done the way you like it, about 15 to 20 minutes. Baste with remaining sauce before serving.
