Shrimp & Broccoli Zoodles a la Vodka Recipe


Zucchini noodles or “zoodles” are a great pasta replacement if you’re cutting down on carbs or if you just want a lighter alternative to pasta. They are available at most supermarkets but at quite a mark-up! You can easily make your own with a spiralizer. (And they are fun to use so why not get the kids involved in dinner prep?)

Ingredients

  • 1 1/2 Tablespoons unsalted butter
  • 1 pound large shrimp, peeled and deveined
  • 1 large shallot, finely chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1/3 cup vodka (optional)
  • 2 cans (14 ounces each) diced tomatoes in sauce
  • 1/2 teaspoon salt
  • 1/8 teaspoon crushed red pepper or more to taste
  • 3 cups small broccoli florets
  • 12 ounces zucchini and/or yellow squash, spiralized into “noodles”
  • 1/4 cup light cream cheese, at room temperature
  • 1/2 cup chopped fresh basil
  • 2 Tablespoons grated Parmesan cheese (plus more for serving)

Instructions

  1. Melt 1 teaspoon butter in a large deep nonstick skillet over medium-high heat and cook shrimp, turning once, until cooked through, about 3 minutes. Remove shrimp to a plate.
  2. Melt 2 teaspoons butter in same skillet over medium heat and cook shallot and garlic, stirring occasionally, until tender, about 4 minutes.
  3. Stir in vodka and cook until mostly evaporated, about 1 minute. Stir in tomatoes with sauce, salt and crushed red pepper and bring to a simmer.
  4. Stir in broccoli; cover and cook 1 minute. Stir in zucchini noodles; cover and cook over medium-high heat, tossing occasionally, just until vegetables are tender, about 4 minutes. (Resist the impulse to add water, mixture may seem dry but the zucchini will give off liquid).
  5. Stir in cream cheese until incorporated. Remove from heat and stir in remaining 1 1/2 teaspoons butter, basil and Parmesan. Spoon into bowls and serve with additional grated Parmesan cheese.
