Spinach & Goat Cheese Omelette Recipe

Ah yes…the humble omelette. With only a couple of eggs and an extra ingredient or two, it really can be amazing. And whether it’s for breakfast, lunch, dinner or late night (especially late night) an omelette is always welcome.

  • Prep Time: 5 minutes
  • Cook Time: 5 minutes
  • Yield: Makes one omelette


  • 2 eggs, well beaten
  • Kosher salt and fresh ground pepper
  • 1 cup fresh spinach
  • 1/2 teaspoon olive oil
  • Butter
  • 2 Tablespoons goat cheese crumbles


  1. In a small bowl beat the eggs with a pinch of salt and pepper.
  2. Heat oil in a non-stick pan over medium heat – add the spinach and cook until it’s totally wilted, a couple minutes max. Put a teaspoon of butter in the pan, let it melt and add the eggs. Let the eggs set a little, then using a spatula gently pull the edges away from the side of the pan letting the uncooked egg run behind.
  3. When the eggs are mostly set add goat cheese to one half, then fold the other half over to cover the crumbles and let cook for a minute.
  4. Slide onto a plate & enjoy.
