Summer Skewer Party


Here’s what I like about skewers: They’re simple, they’re delicious and who doesn’t like a skewer? Not to mention once marinated it’s a no brainer to let your guests cook them themselves. Fun for them and less work for you. I’ve got your back.

Ingredients

Shrimp Skewers

  • 1 pound large shrimp, peeled, deveined with tails removed
  • Wooden skewers
  • Olive oil
  • 1 teaspoon each cayenne, cumin, garlic powder & salt
  • 1/3 cup mayonnaise

Beef Skewers

  • 1 pound skirt or flank steak
  • Wooden skewers
  • 1/3 cup low sodium soy sauce
  • 1/4 cup sake
  • 2 cloves garlic, minced
  • Inch piece of ginger

Chicken Skewers

  • 1 pound chicken thighs
  • Wooden skewers
  • 1/3 cup olive oil
  • Juice and zest of one lemon
  • 1 large clove garlic, minced
  • 2 teaspoons fresh rosemary, or 1 teaspoon dried

Instructions

Shrimp Skewers

  1. Skewer shrimp lengthwise onto skewers and lightly oil. Combine cayenne, cumin, garlic powder & salt - mix well. Season shrimp with mix and refrigerate until ready to use. Remove from fridge 30 minutes before grilling. Heat grill to medium high. Brush shrimp with mayo and grill until done – 3-4 minutes total. Prep Time: 5 minutes, Cooking Time: 5 minutes, Makes: 1 pound

Beef Skewers

  1. Put steak in freezer 30 minutes to make it easier to slice. Slice into 1/4 inch (or less) slices and weave back & forth onto skewers. Combine soy, sake, garlic and ginger – mix well. Stand skewers up in a tall glass and add to soy marinade. Let sit an hour up to overnight. Heat grill to medium high and cook skewers until done, about 5 minutes total. Prep Time: 30 minutes to overnight, Cooking Time: 5 minutes, Makes: 1 pound

Chicken Skewers

  1. Cut chicken into 1 inch pieces and thread onto skewers. Combine olive oil, zest and juice of lemon, garlic and rosemary – mix well. Stand skewers up in a tall glass and add oil and lemon marinade. Let sit up to 2 hours. Heat grill to medium high and cook skewers until done, 5-7 minutes total. Prep Time: up to 2 hours, Cooking Time: 5 minutes, Makes: 1 pound
