What to Take to a Holiday Dinner

There’s that moment when you’re asked to bring something to a holiday dinner and part of you starts to freak out a little – what to take, what to take.  Well, we have your back. If you’re asked to bring something hot, we have a delicious Cauliflower Risotto. And for cold (make that room temp) a crazy good & simple Bread Pudding. Either way you’re in good shape.

Recipe for Bread Pudding



  • Prep Time: 10 minutes
  • Cook Time: 25 minutes
  • Yield: Serves 8


  • 2 Tablespoons each butter & olive oil
  • 3 cloves garlic, minced fine
  • 1 small yellow onion or 1/2 large onion, diced fine
  • 8 ounces thinly sliced cremini mushrooms
  • ½ cup edamame
  • 2 cups chicken broth
  • 1 cup whipping cream
  • 1 head cauliflower, florets removed
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped curly parsley
  • Kosher salt & fresh ground pepper


  1. In a large sauté pan, heat butter and olive oil over medium heat and add garlic, onions, mushrooms, and edamame and cook until softened, about 5 minutes.
  2. Put florets in a processor and pulse until it looks like rice – approximately 10 seconds then add to vegetables. Stir well to mix and allow to heat through – 2-3 minutes.
  3. Add chicken broth and allow cook down – about 5 minutes. Reduce heat to low, stir in cream, Parmesan, parsley, Kosher salt and pepper to taste.
  4. Let simmer 5-10 minutes to thicken.
