White Bean Chicken Chili Recipe

I love a tradition, and this White Bean Chicken Chili recipe has been our Halloween Eve taste treat for a very long time. The key is to make a bunch of it. Then let it be the casual, comfort-food center of a trick or treat ‘door answering’ party. Oh, make a double batch because it freezes well too.

  • Prep Time: 10 minutes
  • Cook Time: 5 minutes
  • Yield: 6-8 servings



  • 1 Tablespoon olive oil
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 – 15 ounce cans white kidney beans (cannellini), drained
  • 1 - 4 ounce can diced green chilies
  • 2 cups cooked chicken, shredded
  • 2 cups chicken broth
  • 2 teaspoons cumin
  • 1 teaspoon cayenne
  • 1 teaspoon oregano
  • Parsley, chopped for garnish


  1. Heat olive oil and sauté onion and garlic until soft.
  2. Add everything else and you're done.
  3. OK, technically you need to simmer everything to let it all warm up.
  4. Then just serve with a little parsley on top in a mug to enjoy as you trick or treat - or answer the door.
