Dished: How to Make The Best Grilled Cheese Ever

All it takes are these easy tips and tricks to make your sandwich like a pro.

Melted cheese between two slices of crispy bread—it is, without a doubt, one of the best things in life. Make it even better: With just a few fresh twists (read on!), you can take the classic sandwich way beyond basic.

3 Hacks for the Ultimate Grilled Cheese:

1. The Hack: Swap mayo for butter, and you get a grilled cheese that’s super-crispy.

The How-To: Spread a thin layer of mayo or vegan mayo on top side of each slice of bread. Place one of the slices in the pan, mayo side down, and top with cheese. Put the other slice on top, mayo side up. Cook for about 3 minutes on each side or until golden brown, occasionally pressing down with a spatula to help melt cheese.

2. The Hack: Shred your cheese (from a bar, instead of using slices or pre-shredded cheese—it melts better). The result: extra-gooey goodness.

The How-To: Get out the grater and shred cheese using the side with large holes. Turn on your stove and place one piece of toast (mayo side down!) on cast-iron pan. Add a handful of shredded cheese on top, then place the other slice of bread on top (mayo slice up). Cook on both sides until it’s crispy. Slice in half and separate slowly for an epic cheese pull before you take a bite.

Grilled Cheese for a Crowd

Making multiple grilled cheese sandwiches doesn’t have to be a pain. With the help of your oven, you can make enough for a group in about 20 minutes! Double or triple the recipe as needed, depending on the size of your crowd.

Pro Tip: We like to use two sheet trays—one on top, and the other on the bottom—to create a sort of sandwich press.
