Soba Noodle Salad with Edamame, Veggies, and Peanuts Recipe

Ingredients

Dressing:

  • 1/2 cup rice vinegar
  • 3 Tablespoons sugar
  • 2 Tablespoons sesame oil
  • 2 Tablespoons lime juice
  • 1 teaspoon lime zest
  • 2 teaspoons minced garlic
  • 1 jalapeno, minced
  • 1/2 teaspoon kosher salt

Salad:

  • 8 ounces soba noodles
  • 12 ounces frozen shelled edamame
  • 2 red peppers, diced
  • 2 cups shredded carrots
  • 1 English cucumber, quartered lengthwise, thinly sliced crosswise
  • 3/4 cup chopped fresh mint
  • 1/2 cup chopped scallions

Instructions

  1. Whisk together dressing ingredients and reserve.
  2. Cook soba noodles and edamame according to package directions. Drain well and cool.
  3. Toss together with all remaining salad ingredients. When ready to serve toss salad with dressing and top with peanuts. Serve with additional lime.
